Antipasta (Recipe from:Doreen Sloan)

2 lbs Cauliflower

3 lbs pickling onions

2 lbs dill pickles

2 lbs fresh green beans OR 4 cans french cut beans

6 tins sliced mushrooms

2 tins black olives

2 tins green olives

4 tins tuna

2 large 40oz ketchup

1 cup vinegar

1 cup mazola oil

2 lbs red peppers

2 lbs green peppers


Put ketchup, vinegar and oil in large pot. Add vegetables. Boil 10 mins. Add tuna, olives and mushrooms.

Put into jars. Process for 5 minutes at 350 degrees.

Some notes I had made for myself when I made this anti pasta.
With the help of 1 person, it took 4 hours to make this anti pasta.

Did not put in dill pickles

Used fresh green beans and used food processor blade to French cut the beans, also used the food processor for cutting some of the olives, green pepper and red peppers See next

Kept jars hot in the oven until ready to process.

Peeled onions after plunging them into boiling water.

Did not put in dill pickles

I also did not put in tuna. (This is just personal preferences)
